Veal Stew



PREP and PRESENTATION NOTES

  • This one-pot dinner, cooked in a covered heavy saucepan on the stovetop, is simple and delicious. 


INGREDIENTS

Stew
  • 2 T olive oil
  • 1 lb veal cubes
  • 1 small onion, minced
  • 1 onion, diced
  • 3 potatoes, peeled, diced
  • 3 carrots, peeled, cut
  • 1 C frozen peas


DIRECTIONS

Stew
  • Brown veal in olive oil on all sides. 
  • Add onions, potatoes, and carrots. Cover, cook on low heat until meat is done and vegetables are tender, about 30 minutes. 
  • Add peas and heat 2 more minutes, until peas are tender.
