PREP and PRESENTATION NOTES

  • Easy, nutritious, fun, and delicious!
  • Turn any morning into a party! Custom make each person's pancake by adding a little extra something to each ladle of batter, either chocolate chips or bits of fruit.
  • Make pancakes of all sizes, including teeny Polka Dot Pancakes. Enjoy a variety of delicious and nutritious toppings. Great for the kids for sleepovers.
  • For the ultimate party breakfast, serve with a variety of foods that go great with pancakes: bacon, scrambled eggs, home fries, OJ.
  • Leftover plain pancakes are even great cold. Spread with grape jelly and roll into a jelly roll. Great for kids on long car trips or as a sweet treat included in a bagged lunch at work or school!


INGREDIENTS

Dry Ingredients
  • 1 1/4 C flour
  • 2 tsp baking powder
  • 2 T sugar
Batter
  • 1 egg
  • 1 C milk, plus more, if needed
  • 1 T oil
Fillings (optional)
  • chocolate chips
  • chocolate syrup
  • blueberries, fresh or frozen
  • pears, peeled, very ripe, slightly mashed
  • fresh strawberries, sliced
Toppings (optional)
  • chocolate chips
  • sliced bananas, apples, or peaches
  • sliced cantaloupe or watermelon
  • fresh blueberries, raspberries, or strawberries
  • walnuts, chopped into tiny pieces
  • chocolate syrup
  • real maple syrup
  • honey
  • grape jelly
  • butter
  • sour cream
  • whipped cream, see recipe: "Whipped Cream"


DIRECTIONS

Batter
  • Combine batter ingredients.
  • Add dry ingredients and stir together, just to combine. Don't over stir.
  • If too thick, add more milk.
Optional: Customize
  • Take orders in advance from each person as to preferred size, fillings, and toppings for each pancake.
Optional: Fillings
  • For a Blueberry, Pear, or Chocolate Pancake, fill the ladle with batter, then stir in 2 T of blueberries or mashed pears or 1 tsp chocolate syrup.
Pancakes
  • Ladle batter, all at once, onto a hot pancake griddle, so it forms an even circle.
 Optional: Custom Sizes
  • For regular pancakes, make 4-inch circles.
  • For smaller pancakes, thin the batter slightly by adding a little more milk.
  • For Mini Pancakes, make 2-inch circles.
  • For Polka Dot Pancakes, make each circle under an inch in diameter.
Optional: Chocolate Chip Pancakes
  • For Chocolate Chip Pancakes, add a sprinkling of chocolate chips on top of each pancake while cooking before flipping.
Cook and Flip
  • Watch the pancake as it cooks. When lots of little air bubbles form at the edges of the pancake and the center starts to almost solidify, peek at the underside by lifting the edge of the pancake with a spatula
  • When the reverse side is properly browned, flip the pancake over with the spatula and cook the other side until also browned.
Optional: Toppings
  • Add toppings to each pancake, to taste.
