Lightning Cookies



When the weather turns rough, and thunder and lightning frighten your small children, bring them inside the warmth and safety of your kitchen and announce that an electrical storm is a wonderful thing, because it means, "It's time to make lightning cookies!"

The sound of the electric mixer will help to distract kids from the noise of the thunder, and, if the power goes out, the dough can be stirred by hand and kids can help.

By the time these cookies are ready to go into the oven, the storm will likely be over. If not, the anticipation of fresh homemade cookies will help keep the kids happy until the storm passes.




PREP and PRESENTATION NOTES

  • This is a recipe for ordinary chocolate chip cookies.


INGREDIENTS

Dry Ingredients
  • 2 1/4 C flour
  • 1 tsp salt
  • 1 tsp baking soda
Cookies
  • 1 C (2 sticks) butter
  • 3/4 C sugar
  • 3/4 C brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 C chocolate chips
  • 1 C walnuts, chopped


DIRECTIONS

Prepare
  • Preheat oven to 375 degrees F.
Cookies
  • Cream butter, sugar, and brown sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Gradually beat in dry ingredients.
  • Stir in chocolate chips and walnuts.
  • Drop by rounded tablespoonfuls onto baking sheets.
Bake
  • Bake about 9 to 11 minutes at 375 degrees F.
Doneness Test
  • Cookies will be golden brown.
Cool
  • Let cool 2 minutes on baking sheet.
  • Remove to brown paper to cool completely.
