PREP and PRESENTATION NOTES
- This is one of the easiest recipes to make in a hurry and the perfect way to use up ripe bananas.
- The trick is to mash the bananas on a plate with a fork, pressing them into separate little pieces rather than large chunks or a puree.
- When adding ingredients together, make sure to just combine them, and not to stir zealously or over mix, so the bread will be lighter and not so dense.
- For a special treat, add a cup of mini-chocolate chips with the walnuts.
- To bring a warm loaf to parties, take it hot out of the oven but keep uncovered, so the cinnamon sugar top stays crisp.
- If it is not likely to be eaten right away, take the bread out of the loaf pan and cool it completely before wrapping in aluminum foil.

Prepare
- butter, for pan
- 1 3/4 C flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 1/4 tsp baking powder
- 2/3 C sugar
- 1/3 C butter
- 2 eggs
- 2 T milk
- 3 bananas, mashed with fork
- 1 C walnuts
- 1/2 C mini-chocolate chips (optional)
- cinnamon sugar
DIRECTIONS
Prepare
- Preheat oven to 350 degrees F.
- Butter a loaf pan.
- Stir dry ingredients and bananas into wet ingredients.
- Add walnuts and (optional) chocolate chips.
- Pour into loaf pan.
- Add topping.
- Bake about 60 to 70 minutes at 350 degrees F.
- Knife test.
