Banana Bread



PREP and PRESENTATION NOTES

  • This is one of the easiest recipes to make in a hurry and the perfect way to use up ripe bananas.
  • The trick is to mash the bananas on a plate with a fork, pressing them into separate little pieces rather than large chunks or a puree.
  • When adding ingredients together, make sure to just combine them, and not to stir zealously or over mix, so the bread will be lighter and not so dense.
  • For a special treat, add a cup of mini-chocolate chips with the walnuts.
  • To bring a warm loaf to parties, take it hot out of the oven but keep uncovered, so the cinnamon sugar top stays crisp.
  • If it is not likely to be eaten right away, take the bread out of the loaf pan and cool it completely before wrapping in aluminum foil.


INGREDIENTS

Prepare
  • butter, for pan
Dry Ingredients
  • 1 3/4 C flour
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 tsp baking powder
Wet Ingredients
  • 2/3 C sugar
  • 1/3 C butter
  • 2 eggs
  • 2 T milk
Bread
  • 3 bananas, mashed with fork
  • 1 C walnuts
  • 1/2 C mini-chocolate chips (optional)
Topping
  • cinnamon sugar


DIRECTIONS

Prepare
  • Preheat oven to 350 degrees F.
  • Butter a loaf pan.
Bread
  • Stir dry ingredients and bananas into wet ingredients.
  • Add walnuts and (optional) chocolate chips.
  • Pour into loaf pan.
  • Add topping.
Bake
  • Bake about 60 to 70 minutes at 350 degrees F.
