PREP and PRESENTATION NOTES
- The perfect balance of meat, vegetables, and pasta.
INGREDIENTS
Chicken
- water, for boiling chicken
- salt, to taste
- 2 cloves garlic, cut
- 4 thin slices ginger, fresh
- 1/2 lb chicken cutlets
Sauce
- 6 T peanut butter
- 5 T soy sauce
- 1 1/2 T sugar
- 1 T warm water
- 1 T sesame oil
- 1 T rice vinegar
- 1/4 C ginger, fresh, minced
- 4 cloves garlic, minced
Noodles
- 1/2 lb linguini, cooked
- 1 T sesame oil
- 10 snow peas, slivered
- 1/2 cucumber, cut in slivers
- 1/2 red bell pepper, diced
- 1 C bean sprouts
DIRECTIONS
Chicken
- Simmer in water: salt, garlic, ginger, and chicken, until chicken is cooked.
- Chop chicken to shreds.
Sauce
- Blend in blender until smooth: peanut butter, soy sauce, sugar, water, sesame oil, rice vinegar, ginger, garlic.
Noodles
- Toss linguini with sesame oil and chopped chicken.
- Add sauce.
- Top with snow peas, cucumber, red bell peppers, bean sprouts.
- Serve immediately, with chopsticks.
