Bran Muffins



PREP and PRESENTATION NOTES

  • Another delicious way to transform a slightly overripe banana into a must-have munchie. 
  • These little powerhouses make the perfect breakfast treat with coffee, and the healthy helping of bran helps your digestion move right along, so your body can more quickly process whatever it was you treated yourself with the day before. 
  • They also travel well. A few of these muffins in an air-tight container should be a staple in the car, right next to the cup holder, for your coffee-and-muffin-breakfast-on-the-go. 


INGREDIENTS

Prepare
  • butter, for muffin tins
Dry Ingredients
  • 1 1/3 C flour 
  • 1 tsp salt 
  • 1 T baking powder 
  • 1/2 C sugar
Cereal
  • 1 1/2 C bran cereal 
  • 1 C milk
Banana
  • 1 banana, ripe
Batter
  • 1 egg 
  • 1/3 C butter
Muffins
  • 1 C walnuts 
  • 1/4 C chocolate chips (optional)


DIRECTIONS

Prepare
  • Preheat oven to 400 degrees F. 
  • Butter 24 mini-muffin tins.
Cereal
  • Add milk to cereal. Let stand 2 minutes.
Banana
  • Mash banana on plate with fork.
Batter
  • Add egg and butter to cereal. 
  • Add dry ingredients. 
  • Add banana.
Muffins
  • Stir walnuts (and chocolate chips) into batter. 
  • Fill muffin tins.
Bake
  • Bake about 20 minutes at 400 degrees F.
Doneness Test
  • Bake until well browned.
